Why these pancakes work so well
No added sugar, no complicated technique, just a few pantry staples and a ripe banana. The banana and blueberries provide plenty of natural sweetness on their own, so these are genuinely delicious without any syrup needed. Our favorite way to serve them is with a spoonful of homemade whipped cream (khameh), the same style we use for
khameh asal.

Make the batter. Mash the banana in a bowl until mostly smooth. Add the egg and vanilla and whisk together. Add the flour, baking powder, and a small pinch of salt. Stir just until combined. Do not overmix, the batter does not need to be perfectly smooth.

Add the blueberries. Gently fold in the frozen blueberries. You do not need to measure them precisely. Add a small handful, or enough to give the pancakes plenty of blueberries without making the batter difficult to handle.

Cook. Heat a skillet over medium-low heat and add a little butter. We use our Our Place pan for this. Spoon small amounts of batter into the pan. Cook for about 2 to 3 minutes, until the edges look set and bubbles begin to appear. Carefully flip and cook for another 1 to 2 minutes, until cooked through and lightly golden.

Serve. Let them cool slightly before serving. They are delicious on their own since the banana and blueberries provide plenty of natural sweetness, or topped with a spoonful of homemade whipped cream (khameh) or a light drizzle of maple syrup.

Tips
- Do not overmix the batter. A few small lumps are completely fine and keep the pancakes tender.
- Frozen blueberries work well straight from the freezer, no need to thaw first.
- Use a ripe, spotty banana for the best natural sweetness.
- Cook over medium-low heat rather than high heat, this keeps the pancakes from browning too quickly on the outside before the inside is fully cooked.
