Persian-Style Slow Simmered Beef Tongue

Ingredients

  • 1 whole beef tongue (2ยฝ to 4 lbs, grass-fed or organic if possible)
  • 1 large yellow onion, quartered
  • 6 garlic cloves, smashed
  • 3 bay leaves
  • 2 tsp ground turmeric
  • 8 to 10 whole black peppercorns
  • 2 tsp sea salt (added during the last 30 minutes)
  • Filtered water, enough to cover by about 2 inches

  • Ghee, butter, or beef tallow (for searing slices)
Whole peppercorns give a cleaner, clearer broth than ground pepper. Salt added near the end of cooking keeps the meat tender and juicy.

Instructions

  1. 1Rinse the beef tongue well under cold water. Trim away any loose fat or glands at the base if needed.

  6. 6Transfer the tongue to a cutting board. While it is still warm, peel away the thick outer skin โ€” it comes off easily when warm and becomes much harder to remove once it cools. Trim any excess fat or connective tissue from the base.
  7. 7Slice thinly across the grain. Serve immediately, or lightly sear the slices in butter, ghee, or beef tallow for 1 to 2 minutes per side until lightly golden.
