Option A β Pan-fry
- 1Grate the onion and squeeze out as much liquid as possible using your hands or a clean cloth. This keeps the patties from falling apart.
- 2Combine ground meat, grated onion, egg, turmeric, coriander, pepper, and sumac (if using) in a bowl. Mix well until fully combined.
- 3Form into small patties about 2 inches wide and Β½ inch thick.
- 4Melt ghee in a pan over medium heat. Cook patties for 3β4 minutes per side until cooked through with no pink remaining. Do not press with a spatula β this forces out the juices and dries the patty out.
- 5Let cool slightly before serving.
Option B β Bake

- 2Preheat oven to 350Β°F (180Β°C).
- 3Combine ground meat, grated onion, egg, turmeric, coriander, pepper, and sumac (if using) in a bowl. Mix well until fully combined.
- 4Form into small patties about 2 inches wide and Β½ inch thick. Place on a lined baking tray.
- 5Bake for 18β20 minutes until cooked through with no pink remaining.
- 6Let cool slightly before serving.
How to Serve by Age

β οΈ Always cook ground meat to an internal temperature of 160Β°F (71Β°C) β no pink remaining. The patty should feel soft when pressed gently between two fingers before serving to baby.
Storage
π§ Fridge
Up to 2 days in a sealed container.
βοΈ Freezer
Up to 3 months. Layer raw or cooked patties between parchment paper and freeze. Reheat gently on the stovetop or in the oven.
Making it Fun
π Make it a family meal β serve with homemade french fries, steamed or baked vegetables, rice, or bulgur. Baby gets their patty, the whole family eats the same meal.
π₯ Add a dipping sauce β plain yogurt, mashed avocado, or unsweetened applesauce makes it easier for younger babies to swallow and adds extra nutrition.
π Finish with lemon β for family portions, a squeeze of lemon and an extra pinch of sumac before serving is the traditional way to finish these.
