Ingredients

  • 1 lb ground beef, lamb, or bison (grass-fed, organic or pasture-raised)
  • 1 medium onion, grated (squeeze out excess liquid)
  • 1 egg
  • 1 tsp turmeric
  • 1 tsp ground coriander
  • ΒΌ tsp black pepper
  • Ghee or butter for cooking
  • Salt to taste (omit under 12 months)
Optional
  • Β½ tsp sumac
Some grocery stores and butchers carry ground beef, lamb, or bison with organ meats already blended in β€” look for labels that say "ancestral blend." This is the most nutritious option and requires no extra preparation.

Instructions

Option A β€” Pan-fry

  1. 1Grate the onion and squeeze out as much liquid as possible using your hands or a clean cloth. This keeps the patties from falling apart.
  2. 2Combine ground meat, grated onion, egg, turmeric, coriander, pepper, and sumac (if using) in a bowl. Mix well until fully combined.
  3. 3Form into small patties about 2 inches wide and Β½ inch thick.
  4. 4Melt ghee in a pan over medium heat. Cook patties for 3–4 minutes per side until cooked through with no pink remaining. Do not press with a spatula β€” this forces out the juices and dries the patty out.
  5. 5Let cool slightly before serving.

Option B β€” Bake

  1. 1Grate the onion and squeeze out as much liquid as possible using your hands or a clean cloth.
  2. 2Preheat oven to 350Β°F (180Β°C).
  3. 3Combine ground meat, grated onion, egg, turmeric, coriander, pepper, and sumac (if using) in a bowl. Mix well until fully combined.
  4. 4Form into small patties about 2 inches wide and Β½ inch thick. Place on a lined baking tray.
  5. 5Bake for 18–20 minutes until cooked through with no pink remaining.
  6. 6Let cool slightly before serving.

Storage

Up to 3 months. Layer raw or cooked patties between parchment paper and freeze. Reheat gently on the stovetop or in the oven.
