For the porridge
  • Soaked millet, drained and rinsed
  • 2Β½ cups whole milk
  • 1 cup filtered water
  • 2 medium apples, peeled and grated
  • 2 tbsp grass-fed butter or ghee
  • 1 tsp ground cinnamon
  • ΒΌ tsp ground cardamom (optional)
  • Β½ tsp vanilla extract
  • Pinch of sea salt

  1. 1Place millet in a bowl and cover with warm filtered water. Stir in lemon juice, apple cider vinegar, or whey. Cover and leave at room temperature for 8–12 hours. Drain and rinse thoroughly before cooking.
  2. 2Combine soaked millet, whole milk, water, grated apple, cinnamon, cardamom (if using), and salt in a saucepan.
