Why soak millet?
- Makes millet easier to digest.
- Helps reduce naturally occurring compounds such as phytic acid that can interfere with mineral absorption.
- Improves texture, making the porridge creamier.
- Fits with traditional food preparation methods used across many cultures for thousands of years.
Instructions
- 1Place millet in a bowl and cover with warm filtered water. Stir in lemon juice, apple cider vinegar, or whey. Cover and leave at room temperature for 8β12 hours. Drain and rinse thoroughly before cooking.
- 2Combine soaked millet, whole milk, water, grated apple, cinnamon, cardamom (if using), and salt in a saucepan.
- 3Bring to a gentle boil, then reduce heat to low.
- 4Simmer for 20β25 minutes, stirring occasionally, until creamy and thick.
- 5Remove from heat and stir in butter or ghee and vanilla extract.
- 6If the porridge is too thick, add a splash of warm milk until it reaches your desired consistency.
Persian-inspired variation
Steep a few strands of saffron in 1 tbsp warm milk for 5 minutes, then stir into the finished porridge. Add a pinch of cardamom and finish with chopped pistachios for a warming, fragrant twist that is deeply traditional.

Tips
- For a deeper, nuttier flavor, toast the soaked drained millet in the butter or ghee for 2β3 minutes before adding any liquid. It transforms the porridge.
- Pears work just as well as apples and are slightly sweeter. Swap them in for a change when apples are not in season.
- If you forgot to soak the millet, rinse it well and proceed. The porridge will still be good, just slightly less digestible.
- Millet is a goitrogenic food, meaning it can affect thyroid function in very large amounts. Eaten as part of a varied diet in normal quantities it is perfectly safe.
