What is Morgh ba Aloo Bokhara?
This comforting Persian chicken stew is proof that simple ingredients can create extraordinary flavor. Bone-in chicken slowly simmers until fall-off-the-bone tender while carrots, potatoes, ripe tomatoes, and dried Persian plums create a naturally rich, lightly sweet-tart broth without needing complicated spices or processed ingredients. The dried plums โ aloo bokhara โ are the heart of this dish. They soften and melt into the broth, lending a gentle sourness that balances the sweetness of the carrots and the richness of the chicken. This is a one-pot meal that is simple enough for busy weeknights and comforting enough for Sunday dinner.
Instructions
- 1Saute the onion. Heat the butter or ghee in a large heavy-bottomed pot over medium heat. Add the sliced onion and cook for 8 to 10 minutes, stirring occasionally, until soft and lightly golden. - 2Brown the chicken. Add the chicken pieces. Cook for 8 to 10 minutes, turning occasionally, until lightly browned on all sides. Browning builds depth of flavor that carries through the entire stew.
- 3Simmer. Pour in the filtered water and add the crushed garlic cloves if using. Bring to a gentle boil, then reduce to a low simmer. Cover and cook for 90 minutes, allowing the chicken to become very tender and the broth to develop a rich, flavorful base.
- 4Add the vegetables and plums. Add the carrots, potatoes, sliced tomatoes, rinsed dried plums, zucchini if using, and tomato paste if using. Season with good quality sea salt โ we use Celtic Sea Salt, unrefined with 70+ trace minerals. Omit salt entirely for the baby portion. Cover and simmer for another 30 minutes, or until the vegetables are fork-tender, the tomatoes have softened into the broth, and the plums are soft while still holding their shape. If using lemon juice for a brighter finish, stir it in during the last 5 minutes. Taste and adjust seasoning.
- 5Rest and serve. Remove the pot from the heat and let the stew rest for 10 minutes before serving. Serve warm over Persian steamed rice with the broth spooned generously over the top, or with warm bread for scooping.
Pit safety note: Dried Persian plums contain pits. Always remove all pits before serving to babies and young toddlers. Check every plum carefully โ the pits are firm and pose a choking hazard. For older children and adults, simply remind them at the table.

Storage

Up to 3 months without the rice. Freeze in portioned containers immediately after cooling. Thaw overnight in the fridge and reheat gently with a splash of filtered water.
Tips
- Always remove plum pits before serving to babies and young toddlers. Check each plum carefully.
- Bone-in chicken produces a richer, more flavorful broth than boneless. The bones release gelatin and minerals into the broth during the long simmer. For a quicker version, boneless thighs work but reduce the simmering time to 45 to 60 minutes.
- Pull the baby portion before adding salt. Season the rest of the pot with good quality sea salt to taste.
- The 90-minute initial simmer is what makes this dish special. The chicken becomes fall-off-the-bone tender and the broth develops a deep, layered flavor that a shorter cook cannot replicate.
- Add the plums with the vegetables, not at the start. They need only 30 minutes and will dissolve completely if added too early.
- A tablespoon of tomato paste stirred in with the vegetables deepens the color and adds richness โ especially useful when tomatoes are not at their peak.
- Let the stew rest for 10 minutes off the heat before serving. The flavors settle and the broth becomes even more cohesive.
