Persian Sweet Potato Fritters

A sweet potato twist on Persian kookoo sibzamini. Made with raw grated sweet potato, eggs, onion, turmeric, and a little flour, these fritters are golden on the outside and soft inside. They're simple enough for little ones and tasty enough to share with the whole family.

Ingredients

  • 1 medium sweet potato, peeled and finely grated, about 2 packed cups
  • 2 large eggs
  • 2 tbsp finely grated onion
  • 2 tbsp flour, we use Molino Grassi Italian 00 flour
  • ½ tsp turmeric
  • ¼ tsp black pepper
  • Good quality sea salt, to taste
  • Grass-fed butter or ghee, generously, for frying

What is kookoo? Kookoo is a Persian family of egg-based fritters, traditionally made with potato in kookoo sibzamini. This version swaps in raw grated sweet potato for a naturally sweeter fritter, golden outside and soft inside. It is not just another sweet potato baby purée, it is a familiar whole food turned into a simple family meal through a Persian dish you may already know, made with ordinary ingredients a busy parent can realistically pull together.

Instructions

  1. 1 Prepare the sweet potato. Peel the sweet potato and finely grate it using a box grater. If it seems particularly wet, gently press out some of the excess moisture, but do not worry about getting it completely dry.
  2. 2 Prepare the onion. Finely grate the onion and gently squeeze out the excess liquid.
  3. 3 Make the mixture. Place the grated sweet potato and onion in a bowl. Add the eggs, flour, turmeric, black pepper, and salt. Mix well until the sweet potato is evenly coated and the mixture holds together when scooped.
  4. 4 Heat the skillet. Melt a generous amount of butter or ghee in a skillet over medium to medium-low heat. We use our Our Place pan for this.
  5. 5 Form the kookoo. Scoop about 2 tablespoons of the mixture into the skillet for each fritter. Gently flatten each one into a small patty. Do not make them too thick, the sweet potato needs time to cook through.
  6. 6 Cook the first side. Cook for about 4 to 5 minutes, until the bottom is deeply golden and the fritter has firmed enough to flip.
  7. 7 Flip and finish. Carefully flip each fritter and cook for another 4 to 5 minutes, lowering the heat if they are browning too quickly. The sweet potato should be completely tender in the center.
  8. 8 Transfer to a plate and repeat with the remaining mixture, adding more butter or ghee to the skillet as needed.
  9. 9 Let cool slightly before serving.
For baby: Make the kookoo small and relatively thin so the sweet potato becomes very tender. Depending on your baby's eating skills, break the fritter into appropriately sized pieces or mash it slightly before serving. You can also remove baby's portion before adding additional salt to the rest of the family's food.
