Why whipped bone marrow?
Bone marrow has been valued in traditional diets across cultures for centuries โ from Persian and Middle Eastern cooking to indigenous diets around the world. Roasting brings out its naturally rich, buttery flavor, while chilling and whipping creates a smooth, airy texture that is easy to spread or stir into warm foods. It is one of the simplest traditional foods you can make, and one of the most versatile ways to add nourishing fats to everyday meals for babies, toddlers, and the whole family.
Instructions
- 1Preheat your oven to 425ยฐF (220ยฐC).
- 2Arrange the marrow bones cut-side up on a parchment-lined baking sheet. Roast for 15 to 20 minutes, until the marrow is soft, gently bubbling, and beginning to pull away from the sides of the bone. Do not overcook โ too much of the marrow will render into liquid and be lost.
- 3Allow the bones to cool for about 5 minutes. Using a small spoon or butter knife, scoop the marrow into a bowl. Pour in any rendered marrow fat that collected on the baking sheet โ do not waste a drop.
- 4Place the bowl in the refrigerator for 30 to 45 minutes. The marrow should feel like softened butter โ firm enough to hold its shape but still soft. This chilling step is essential. If the marrow is still warm it will not whip properly.
- 5Using a hand mixer or stand mixer fitted with the whisk attachment, whip for 3 to 5 minutes until pale, light, and fluffy. Add sea salt if serving adults or children over 12 months.
Save the roasted bones
Once the marrow has been removed, the bones are perfect for making a rich, mineral-packed meat stock or bone broth. Do not discard them.
How to Use It

- Stir into mashed sweet potato
- Mix with mashed squash
- Fold into shredded beef or lamb
- Add to pureed vegetables
- Melt into millet porridge
- Spread thinly on soft sourdough toast fingers
Toddlers
- Spread on sourdough toast

- Stir into rice or bulgur

How to Store Whipped Bone Marrow

Up to 4 days in an airtight glass container.
โ๏ธ Freezer
Up to 3 months. Freeze in ice cube trays, then transfer to a freezer-safe container. Small frozen portions are perfect for stirring into meals as needed.
Tips
- Roast at 425ยฐF until the marrow is just bubbling โ not fully melted. That is the window for the best yield and texture.
- Save every drop of rendered fat from the pan. It is part of the marrow and adds to the final flavor and texture.
- Chill before whipping โ this is the most important step. Warm marrow will not whip into a fluffy texture.
- Whip while cool but still soft, not frozen solid. The texture of softened butter is the target before you start whipping.
- Bone marrow is primarily a fat-rich food. It contains iron, but it is best served alongside iron-rich foods like meat, egg yolk, or liver rather than as the sole source of iron in a meal.
- Babies only need 1 to 2 teaspoons per serving โ a little goes a long way.
Making it Fun
